Southcentral Kentucky Community and Technical College (SKYCTC) professor, Executive Chef Michael Riggs, Ph.D. CEC CCA FMP has been chosen as the American Culinary Federation Kentucky Chapter Chef Educator of the Year.

The ACF Chef Educator of the Year award pays tribute to an active culinary educator whose knowledge, skills, expertise, guidance, and direction have enhanced the image of the professional chef and who, by example, has given leadership, guidance, and direction to students seeking a career in the culinary profession.

Dr. Riggs is a professor at the Southcentral Community and Technical College Culinary Arts Program and will move on for consideration for the Southeast United States Regional Chef Educator of the Year at the Regional Conference in Charleston, South Carolina in April 2014.

“The award is an honor since it is voted on by chefs in industry and other chef educators,” Riggs said. “It’s nice to know your peers think you are doing things the right way.”

The award will be presented at the ACF awards ceremony to be held in Louisville in January.

SKYCTC President, Dr. Phillip Neal recognized the Veterans present and thanked them for their service defending our freedom.

Their speaker was a member of the faculty who spent years in Navy submarines during the Cold War era. He explains why he says freedom is not free.

"Sometimes we see the emails from the governor saying fly the flag at half mast. That face, or that name belongs to somebody, and they're not going to be coming back. I was lucky because I returned from 21 years of military service, but there are alot of people that weren't so lucky," said Navy veteran Phillip Stagner.

Stagner talked about the impact military life has on families.
Then, one student sang the national anthem, followed by the audience's recital of the pledge of allegiance.

Recently SKYCTC students Bobby Burrell, Kenneth Russell, and Wes Deweese competed in the National Cyber League Fall 2013 Competition. This is the first time that SKYCTC has participated in this event.

After two competitions our students scored in the top 20% nationally with one student ranking in the top 1% for his bracket.

According to Royse, “945 students, nationwide, participated in the first two competitions. The competitions followed a “capture the flag format” that tested students skills in Enumeration and Exploitation, Network Traffic Analysis, Open Source Intelligence and Social Engineering, Reconnaissance: Scanning and Enumeration, Web Application Exploitation, Password Cracking, and Wireless Access Exploitation”.

Royse also stated that he was thrilled with how well his students had finished. “Since this was our first time in the competition, I really had no expectations. These guys did an amazing job. We can’t wait to compete again next year, “ said Royse.

Alumni of the Month - Jason Lindsey

Jason Lindsey
Jason Lindsey, our SKYCTC Alumni for November, chose a unique but rewarding path in his desire to work with children. Lindsey graduated from SKYCTC in May of 2012 and is currently the Executive Chef and Dining Hall Manager at the Center for Courageous Kids located in Scottsville, Kentucky.

“I came from a family of great cooks, especially my grandmother, who allowed me to be creative in the kitchen at a very young age”, said Lindsey.

Lindsey actually began his education at Sullivan in Louisville however, as he put it “life happened and it took me 14 years to finish a 2 year degree”. But according to Lindsey, that time gave him the opportunities to gain real life experience and the opportunity to explore other options. In the end, he returned to Culinary Arts and was excited to discover a program that has an “Exemplary Status” from the American Culinary Federation Education Foundation so close to his home community.

“I am truly blessed”, said Lindsey, “the Culinary Arts program at SKYCTC is one of the best that can be found anywhere. Chef Riggs and Mrs. Hunt challenge students to be the best they can be and to work hard for the student’s personal goals”.

Lindsey is currently fulfilling exciting challenges at the Center for Courageous Kids (CCK). CCK is a state of the art medical facility located outside of Scottsville, Kentucky, that provides a cost-free, safe, and fun camping experience for seriously ill and disabled children and their families. In addition to offering summer camps, CCK also offers family retreats most weekends of the year.

According to Lindsey, that while most weekends call for special attention to dietary needs, the biggest challenge is coming up – Severe Food Allergies. Not only will Lindsey prepare meals that have eliminated dairy, wheat, tree nuts, peanuts, shellfish, fish, eggs, and soy but he will also need to remove corn (in any form), pork and oranges.

“We will also be doing a deep clean of the kitchen and dining hall because we believe in doing everything we can for our families,” said Lindsey.

INCLEMENT WEATHER STATUS - OPEN REGULAR SCHEDULE

Unusual situations, such as severe weather, may require Southcentral Kentucky Community and Technical College (SKYCTC) to delay its class schedule or close the institution. In the event severe weather poses a threat to the safety of SKYCTC students or employees, the College President (or his designee) will determine one of three types of schedules that all campuses will implement. The scheduling decision will be in effect for all locations equally (i.e. if the main campus is closed, both Glasgow locations will be closed), and all scheduling decisions will apply to students and employees alike (i.e. if students report at 10:00 a.m. faculty and staff report at 10:00).

The college has the following three types of schedule:

1. Regular Schedule

All classes at all locations are operating as originally scheduled with no adjustment.

2. Snow Schedule

Classes at all locations will begin at 10:00 a.m., beginning with classes that were originally scheduled to begin at 10:00 a.m. The snow schedule will be posted no later than 6:15 a.m. the day of the schedule change.

For example on the day of the schedule change
(1) a 9:30 a.m. Basic Public Speaking class would be canceled
(2) a 10:00 a.m. Catering class would meet as regularly scheduled

Employees should report to work by 10:00 a.m. Employees not reporting by 10:00 a.m. must take vacation time or make up work as mutually agreed with their supervisor. In the event that the snow schedule is in effect and the weather situation worsens, the college reserves the right to change the schedule to a “closed” status. If this change in schedule is deemed necessary, the decision will be posted prior to 8:30 a.m., otherwise.

Note
Due to an automated process, the snow schedule will be communicated as a “two hour delay” on WBKO’s television broadcast.

3. Closed

All campuses are closed. Classes will not meet. Once this schedule change is made it will be in effect for all day and night classes and will not be reversed.

Announcements regarding delays or closings will be communicated using

1. The college weather line (270-901-1100)
2. The main switchboard message (270-901-1000)
3. Selected area radio stations
4. Bowling Green's (WBKO-TV) television station
5. SNAP notification
6. College e-mail
7. The college website http://bowlinggreen.kctcs.edu)

During the winter months the college’s website will have a stoplight posted in the “News and Event” section of the homepage. The light color will indicate the current schedule.

Green = Regular schedule
Yellow = Snow schedule
Red = Closed

Below is an example of what will be displayed on the website Homepage.

This December, community leaders and individuals will help make Christmas dreams a reality for children through their generous donations to Toys For Tots. Founded in 1947 by Major Bill Hendricks, “Toys For Tots” is a project of the United State Marine Corps with the mission to collect and distribute new toys to less fortunate children all across the United States. Here in Southcentral Kentucky an estimated 7,000 children, living in 8 counties, will receive toys through the “Toys for Tots” program this Christmas. Heading up this colossal feat, worthy of Santa himself, is SKYCTC OST Program Coordinator, Janel Doyle.

Doyle is an Associate Professor of Office Systems Technology at Southcentral Kentucky Community and Technical College and has for headed up the Toys for Tots program in Southcentral Kentucky for the last two years. Doyle is the first civilian coordinator in Southcentral Kentucky and one of only a few women across the country to hold the coordinator position. Each year she attends a conference with 700 other coordinators from across the US to learn more about the coordination of the Toys for Tots program.

When asked what attracted her to the program, Doyle stated, “I came from a strong military background, and was drawn to this program because 100% of the money and toys donated go directly to the children we are here to serve. We work on an honor system and often help those that are ineligible for other assistance”.
Last year, “Toys for Tots” helped 5,400 children in 7 counties of Southcentral Kentucky but this year they have added another county and estimate that they will assist approximately 7,000 children in 8 counties this year.

“The need continues to grow and there are more families to serve as we add additional counties”, said Doyle, “and we do not receive enough local donations to meet that need. This year we received $12,000 from the Toys For Tots Foundation to help bridge the difference”.

Doyle feels extremely fortunate to be coordinating this effort in Southcentral Kentucky.
“Southcentral Kentucky Community and Technical College has the highest number of volunteers who help with the Toys for Tots program, and I could never serve as coordinator without the support of Dr. Neal and everyone at SKYCTC. We are also fortunate enough to have the support of Camping World, Fruit of the Loom and our local Toys R Us store”, said Doyle. “It is amazing to see the community come together to help so many children.”

Yes, Southcentral Kentucky is a wonderfully generous community but it takes a wonderfully generous spirit to bring it all together.

This unique professional development experience explores such broad-ranging issues as leadership traits, national issues and trends, professionalism, media relations and customer service.

Participants will have opportunities to interact with community college leaders in Kentucky and from across the nation to learn about leadership challenges facing higher education. There will be a variety of forums for the participants to engage with these leaders from January through June, providing them with skills that can be applied when they return to their campuses.
